This is sooo good. People have no idea that it is not the 'traditional' caesar recipe.
2 cloves garlic, minced
2 Tbsp. lemon juice
3/4 cup organic tofu, chopped
2 1/2 tsp. Dijon Mustard
1 Tbsp. apple cider vinegar
1/2 tsp. sea salt
3/4 tsp. black pepper
1/4 cup water
1/2 cup olive oil
Blend all ingredients together until smooth. A blender will get it more smooth than a food processor. I also use my 'Magic Bullet' to blend it.

This recipe is from the cookbook Refresh, and from the vegan restaurant Fresh in Toronto.
2 cups white kidney beans
½ cup olive oil
¼ cup parsley, chopped
¼ cup olives, chopped **
2 cloves garlic, chopped
2 ½ tbsp. fresh lemon juice
1 ½ tsp. sea salt
1 tsp dried oregano
black pepper to taste
Blend all ingredients together in a food processor until smooth.
Make 2 ½ cups
**olives can be replaced with roasted red peppers, spinach, feta cheese
This is one of Diane's favourite creations. Go veggie burger, GO!
Makes 12 burgers
1/3 cup quinoa, uncooked
1/3 cup millet, uncooked
1 cup water
1 tbl olive oil
1 cup onions, finely chopped
2 cloves garlic, finely chopped
½ cup carrots, grated
1/3 cup celery, red pepper, green pepper, finely chopped
2 tbl olive oil
1 cup (8 oz) chick peas, cooked
1 cup (8 oz) red kidney beans, cooked
½ cup sunflower seeds
¼ cup fresh parsley, chopped
¼ tsp cayenne pepper
2 tbl nutritional yeast
2 tsp sea salt
1 ½ tbl ‘Braggs Liquid Aminos'
(add more spices if desired)
Bring water to boil and add the quinoa and millet. Reduce to low and cook for 15 minutes.
Heat oil in non-stick frying pan. Add, onions, garlic, carrots, celery, red & green pepper. Reduce heat to medium and saute for 5 minutes.
In a food processor or blender mix oil, chick peas, kidney beans, sunflower seeds, spices, yeast & Braggs until smooth.
In a bowl mix all ingredients together.
Make patties
Heat oil in frying pan. Add burgers. Reduce to medium heat. Cook for 4 minutes on each side or until golden brown. Serve with salsa or other condiments.
This yummy dessert will be loved by kids of all ages. You can serve it as is, or dress it up with a sprig of mint and some fruit. A pineapple stick or some raspberries and blueberries are a nice combo.
2 large ripe avocados (or 3 small)
1/2 cup agave nectar
1/4 cup raw cacao powder
1 tsp vanilla extract
1 tbl coconut oil (optional)
dash of sea salt
Blend all ingredients together until smooth consistency.
